Greek pizza

Here is the delicious recipe for Greek pizza we ate tonight for dinner. Don't be afraid of the feta "cheese"- it's not nearly as strange as you might think. It really tastes delicious! We haven't had this pizza in ages and I'm so happy we got to eat it while being snowed in on a Friday evening. We are following our pizza with Season Two of the West Wing. Woo! Friday!

Ingredients:

1 recipe, easy pizza dough
olive oil
fresh garlic, minced, chopped, however you like it
1 tomato, diced
half a red pepper
1 package spinach, steamed
1 recipe, feta "cheese"
1/2 can black olives, sliced

1. Pre-heat the oven to 450ºF. Stretch out pizza dough onto an olive-oiled cookie or pizza sheet.

We like a lot of garlic on our pizza!
2. Spread some olive oil on top of the pizza and sprinkle the garlic all over the top.

3. Place the tomato and red pepper evenly over the top of the garlic. Add the spinach on top of this, followed by the feta "cheese" and the black olives.

4. Bake for about 15 minutes and enjoy while hot.
